Blueberry Peach Crisp
1 C all purpose flour
¾ C plus 2 TBS sugar, divided
1 tsp baking powder
½ tsp salt
½ tsp ground cinnamon
1 egg, lightly beaten
3 C peeled and sliced fresh peaches
2 C fresh or frozen blueberries
¼ C butter or margarine, melted
Preheat oven to 375. In medium bowl, combine flour, ¾ C of the sugar, baking powder, salt and cinnamon. Add egg; mix with fork until mixture resembles coarse crumbs. Place peaches and blueberries in large bowl. Add the remaining 2 TBS sugar; toss to coat. Place fruit mixture into greased 8 or 9 inch square baking dish; sprinkle with crumb mixture. Drizzle with butter. Bake 35-40 minutes or until top is lightly browned.
