Peach Cobbler

Fruit:
2 TBS butter
5 LBS peaches (halved, pitted and cut into wedges)
1 ½ C sugar
¼ C tapioca
1 TBS fresh lemon juice
2 tsp ground cinnamon
¼ tsp ground nutmeg

Biscuits:
2 C all purpose flour
¼ C sugar
1 TBS baking powder
1 tsp baking soda
1 tsp salt
¼ C chilled butter, cut into pieces
1 C sour cream

Preheat oven to 400. Grease pan (9 x 13). Place peaches in large bowl. Add ingredients in fruit category. Gently mix.

Biscuits: Combine flour, sugar, baking powder, baking soda, salt in food processor. Add butter and cut in. Add sour cream and blend until soft dough forms. Turn dough onto floured surface and knead about 30 times. Roll out to ½” thickness. Cut out biscuit shapes. Transfer fruit to prepared pan. Top with biscuits. Bake until biscuits are golden brown
